Maple, Pecan and Coconut Granola with Berries

Ingredients

  • 1 pear, peeled and diced
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1 tsp vanilla bean paste
  • 3 tbsp sunflower oil
  • 50 ml maple syrup
  • 200 g jumbo oats
  • 75 g pecans, chopped
  • 100 g mixed seeds
  • 40 g raw coconut chips
  • 1 pack Vita

Instructions

  1. 1. Preheat the oven to 170°C (150°C fan).

  2. 2. Add the pear to a small saucepan with 3 tbsp of water, cover and set over a medium heat for 5-8 minutes, until softened. Transfer to a blender with the cinnamon, ginger, vanilla, oil and syrup, and blitz until smooth and combined.

  5. 5. Leave to cool completely before scattering over the coconut and stirring through.
