Apple, Pecan and Coconut Granola with Berries
Ingredients
- 1 tsp pear, peeled and diced
- 1 tsp ground cinnamon
- 1 tsp ground ginger
- 1 tsp vanilla bean paste
- 3 tbsp sunflower oil
- 50 ml maple syrup
- 200 g jumbo oats
- 75 g pecans, chopped
- 100 g mixed seeds
- 40 g raw coconut chips
- 1 pack Vita

1. Preheat the oven to 170°C (150°C fan).

2. Add the pear to a small saucepan with 3 tbsp of water, cover and set over a medium heat for 5-8 minutes, until softened. Transfer to a blender with the cinnamon, ginger, vanilla, oil and syrup, and blitz until smooth and combined.

3. Add the oats, pecans, seeds and a pinch of sea salt to a bowl then stir in the pear mixture until everything is well coated.

4. Tip onto a large baking tray and bake for 35-40 minutes until golden, stirring halfway through.

5. Leave to cool completely before scattering over the coconut and stirring through.

6. Store in an airtight container and serve with chilled Vita 3.5% and berries.
